Hugh Fearnley-Whittingstall fish course!

In the summer holidays mum and I went to a HFW cooking course at the River Cottage HQ. Before we got there we stopped for lunch in the River Cottage Canteen, I had a watercress, yoghurt and lemon-juice soup, that I now want to make at home.   
They gave us a tractor ride from the car-park down to the house. We had two mackerels, we filleted them both then with the first we put in the hot smoker. I had mine for breakfast on toast the next day!

We stuffed the second fish with a tomato salsa thing and tied up with string.

We all had our stuffed mackerels for lunch with a turnip, orange and green bean salad that the course-leader made.

I was surprised that I didn't find any bones in mine because it was my first time dealing with fish.

After lunch we went on a tour of the garden. We visited three polytunnels and got to try some tomatoes with some fresh basil; the combination was fantastic.



Before the course I much preferred shellfish to other fish. But now I really enjoy both.
